Serves 4
- 1 jar ‘Sabores Aztecas' Guajillo sauce
- 300g lean pork meat (shoulder is best), cut in 2cm
- 3 tablespoons corn oil
- 1 onion, thinly cliced
- 5 cloves garlic, thinly sliced
- 2 potatoes, peeled and cut into chunks
- 5 carrots, peeled, and sliced into rounds
- Sea salt and black pepper
Marinade the meat in the Guajillo sauce – this is best done overnight, or for a minimum of 1 ½ hours. Sear the pork in the oil in a wide pan over a high heat, keeping any extra marinade to one side. Now add the onion and garlic, and sautee for 2 minutes, then add the marinade, potatoes and carrots and bring to a simmer. Cook gently over a low heat until the potatoes are tender – around 25 minutes. Serve with nopales or rice. |
