Pollo en salsa verde – Chicken breast in salsa verde
1 jar of ‘sabores aztecas' salsa verde
4 skinless, boneless chicken breasts
3 tablespoons corn oil
1 onion, very thinly sliced
2 large cooked potatoes, cut into chunks
Sea salt and black pepper
Cut the chicken breasts into strips and season with salt and pepper. Heat the oil in a wide pan, add the onion and fry until it just turns translucent. Add the chicken and sautee until just cooked, then add the salsa verde and potato and bring to a simmer (add a little chicken stock or water if it looks dry). Serve with rice, nopales and/or beans.
